Mango Waffles

At the farmers market this past weekend, my daughter sampled all of the honey that they have to offer (as usual). This time as she was talking it up with the lady selling honey, she handed her a small flyer filled with recipes using honey. So now all week my daughter has been begging me to make something from the list! The flyer had a recipe for waffles with honey and berries. Sounded yummy but of course I like to make thing yummier! We made Mango waffles drizzled with honey and topped with a simple fruit salad. Yummier accomplished!

2 mangos peeled, diced and pureed in the food processor

2 cups of flour

3 tsp. baking powder

1/4 cup of sugar

2 eggs

1/4 cup of melted butter

1 1/4 cups of milk


Heat waffle maker and spray with nonstick spray. In a large mixing bowl combine the flour, baking powder and sugar. Then  add in the mangos, eggs, butter, milk and whisk until smooth. Scoop out appropriate amounts for your waffle maker and bake until the little light turns on (or whatever your does!). {To make a simple fruit salad, just chop up whatever fruit you have and add some yogurt to coat. Maggie picked out blueberries, apples and bananas with strawberry yogurt today.} Serve your waffles with a drizzle of honey and if you wish, top it with some fruit salad as well.

    • If you don’t have a waffle maker, just thin out the batter a touch and make pancakes! Or Annecakes as I like to call them.
