Champion Chili

My mother has always made really good chili. Everyone in the family loves it so much, that for the past 10 years or so my mom has made her huge pot of chili for Christmas dinner. Instead of a big sit down dinner, everyone just grabs a comforting bowl of chili when they arrive, adorn it with their favorite fixin’s and dig in.  Over the years, I have picked up a few secrets from her that you would not expect in a chili recipe, like cinnamon and sausage,  but they make it awesome! My chili came in second place last year in my churches annual chili cook off (go gators!) and this past Sunday it came in first place. Last year I was worried that I didn’t add enough spice, this year I was worried that I might have added too much, but I guess I got it just right!

Champion Chili

4 T. olive oil

1 yellow onion diced

1/2 red bell pepper diced

1/2 green pepper diced

1 lb. of ground sage sausage

1 1/2 lbs. ground beef

1 28 oz. can of crushed tomatoes

1 15 oz. can of diced tomatoes

1 15 oz. can of red beans

1 15 oz. can of kidney beans

1 15 oz. can of pinto beans

1 small can of chipotles in adobo

1/2 cup of water

3 tsp. salt

3 T. cumin

2 tsp. cinnamon

2 T. coriander

3 T. Chili powder

In a large pot over medium-high heat , drizzle in the olive oil and add diced onion and bell peppers. Stir the vegetables to coat in oil, add 1 tsp. of salt  and cook until soft. Add 2 T. coriander, 1 tsp. cinnamon, 2 T. chili powder, 3 T. cumin, stir and cook with veggies for a minute then add sausage and beef. Break up the meat with a wooden spoon and continue to cook until meat is cooked through. Next add the cans of beans drained, 1/2 cup of water, two cans of tomatoes the rest of the salt, cumin, coriander and cinnamon. Remove one or two (depending on how hot you like your chili) chipotle peppers in adobo sauce, finely mince and stir into your chili. Continue to cook on low heat, stirring occasionally for about 30 minutes.  Serve with your favorite chili toppings, and yes, this would be stellar to serve for super bowl sunday!

  1. I can’t wait to have another Christmas like the ones we used to have,it may be awhile, but fun to look forward to !
    We can have our own chili cook-off. Mine for the more timid & yours for the BRAVE !
