Yesterday afternoon when my daughter informed me that she wanted to bring in pie to her math class today for a PI day celebration that they are having, I was excited to get baking! I thought rather than making one pie for the class, it would be more fun if each classmate had their very own pie to enjoy and marvel over the concept of PI. Whoopie pie was the perfect solution! I went ahead and made them green to be an awesome St.Patricks day treat as well!! This would be a super fun recipe to whip up this weekend with the kids!
1 stick of butter melted
1 cup of brown sugar
2 tsp. peppermint extract
1 egg
2 1/4 cups of flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 cup of milk
Green food coloring
Marshmallow Fluff
Chocolate chips
Green sugar or sprinkles
Preheat oven to 350 degrees, spray two cookie sheet pans with nonstick spray and set to the side. In a large mixing bowl, combine the butter, sugar and egg, whisk until fluffy. In a separate bowl stir together the flour, salt and baking powder. Measure out your 1 cup of milk and add to it, the peppermint extract and about 20 drops of green food coloring. Alternate mixing the flour and milk mixtures into the eggs, sugar and butter. Once all combined, drop round scoops of batter (about 2 T. depending on how big you want to make them, I think they are better smaller because they are so sweet!) onto the prepared cookie sheets leaving a couple inches in between drops. Bake for about 15 minutes, rotating pans half way through. Place on wire racks or a cool tray until room temp. Stir some chocolate chips into your marshmallow fluff and spoon a small amount onto the cooled green cookies and place another on top to sandwich the fluff. (These can get super messy if you put too much filling, the messy ones are to be consumed first!) Lastly, sprinkle some green sugar or sprinkles on the exposed fluff around the edges.
