Recently, while visiting my in-laws in Kentucky I was loaded up with cucumbers from their farm. I have been trying to squeeze them into as many recipes as possible to use them up and still I have cucumbers stuffed in the fridge. Good time to play around with pickle recipes! When life (or your mother in-law) hands you cucumbers, make pickles!

2 12 oz. canning jars with lids or a bowl with lid (these are easy!)
4 cups of thinly sliced cucumbers
1/4 cup of thinly sliced white onion
1 1/2 cups of white vinegar
1 1/4 cups of sugar
1 tsp. salt
1/2 tsp. mustard seeds
1/2 tsp. celery seeds
1/2 tsp. turmeric
1/2 tsp. crushed red pepper flakes
Fill your jars or bowl with the sliced cucumbers and onion. In a saucepan over medium-high heat combine the remaining ingredients and bring to a boil while gently stirring to dissolve the sugar. Let the mixture boil for about one minute, then pour over prepared cucumbers. Cover with lids and once they have cooled to room temperature, place them into the refrigerator and let them get their pickling on for 4 days. Yes, that easy!
