Pancakes

After reading the book If You Give a Pig a Pancake by, Laura Numeroff and illustrated by, Felicia Bond, you just have to make pancakes! In the story, the little pig is inspired to do things all over the house besides eating pancakes! She even takes pictures to send to each of her friends. Just for fun, take a picture of yourself making pancakes and text it to a friend. I’m sure it will make their day! #themuffinanne #veganyogi #ahimsanation

Pancakes (or as I like to refer to them, Annecakes) 

1 ½ cups of flour

2 tsp. Baking powder

1 tsp. Sugar

½ tsp. Salt

½ cup Just Egg

1 ¼ cup Coconut milk (maybe more if you like a thinner batter)

1 tsp. Vanilla extract

3 T. melted plant based butter

Mix the above ingredients into a large bowl and then make some pancakes! Heat a large skillet or griddle pan over medium heat and spray some coconut oil to prevent your cakes from sticking. Make them whatever size you like! When small bubbles appear evenly across the top, its time to flip. Cook for a couple more minutes until fluffy. Serve them with any toppings you like. I had mine with a can of peaches that I reduced in a saucepan with a couple teaspoons of brown sugar, a piece of vanilla bean, some chopped walnuts and of course, here in Kentucky, I had to add a splash of bourbon. My kids had them with maple syrup, and chocolate chips.
