Minecraft Creeper Muffins

Who doesn’t love Minecraft?! We all know someone who is obsessed with this amazing game that is popular with both kids and adults all over the world. Although I have never played it myself, I’ve bought loads of merchandise over the last several years for a couple of my kids and I’m all too familiar with seeing the awesome creations that they have made. A character that we all know from the game are the Creepers. Have fun making these green Creeper Muffins!

Minecraft Creeper Muffins

(This recipe makes about 15-16 muffins or 12 regular size muffins and 12 mini muffins)

1 medium Zucchini (remove ends and cut to fit through top of food processor)

1 green apple (remove the core and cut to fit into the top of food processor)

2 handfuls of fresh spinach

¼ cup vegetable oil

equivalent of 2 eggs using the substitute of your choice

½ cup of sugar

½ cup of brown sugar

2 cups of flour

1 tsp. Baking powder

1 tsp. Baking soda

½ cup soy milk

2 tsp. Cinnamon

1 cup of raisins (optional)

Preheat the oven to 350 degrees. Prepare muffin pans with paper liners or spray with a non-stick spray. In a food processor fitted with the chopping blade add the spinach. Then add the shredding attachment to the food processor and add your zucchini and apple through the top to shred all 3 ingredients together. In a large mixing bowl, add the oil, both sugars, egg substitute and whisk together. Then add the shredded mix from the processor, raisins and soy milk. Stir all together until well blended. Add the flour, baking soda, baking powder and cinnamon last and mix thoroughly to combine. Spoon the batter into prepared muffin pans to fill each about ¾ of the way. Bake at 350 for about 20 minutes.
