Banana Chocolate Chip Muffins
½ cup vegetable oil
½ cup brown sugar
½ cup granulated sugar
½ cup Just Egg (or your preferred egg replacer to equal 2 eggs)
2 tsp. vanilla extract
4 extra ripe bananas
2 cups of flour
1/3 cup hemp hulls
1 tsp. baking powder
1 tsp. baking soda
1 cup vegan chocolate chips
¼ cup plant based milk
Preheat oven to 350 degrees. Coat a muffin pan with non stick spray and set to the side. In a large mixing bowl, whisk together the oil, vanilla extract, both sugars and egg substitute. Add the bananas and mash them into the sugar mixture with a potato masher. In a separate bowl, stir all of the dry ingredients together. Add the dry ingredients, chocolate chips and milk to the banana mixture and stir until fully combined. Scoop the batter into the prepared muffin pan and bake at 350 for 20-25 minutes or until nice and golden brown. Enjoy!
