I signed up earlier in the week to bring a soup into Church Friday night for a soup pot luck. Thursday night I realized I had forgot all about it and had nothing planned to cook. When I searched the kitchen for on hand ingredients, I found everything needed to whip up a pot of vegetarian chili! It was a hit! My crockpot was cleaned out in no time and we got a fast getaway before my 2 year old had a complete meltdown! Pot luck success!!
Vegetarian Chili
4 T. olive oil
1 yellow onion diced
2 zucchini diced
4 T. Chili powder
2 T. Cumin
2 T. Coriander
2 tsp. Cinnamon
Salt to taste
1 15oz. can of red beans
1 15oz. can of kidney beans
1 15oz. can of black beans
1 28 oz. can of crushed tomatoes
2 T. chopped chipotles in adobo sauce
1 cup of beer
In a large pot over medium-high heat, drizzle in the olive oil. Then add the onions and zucchini, sprinkle with salt and continue to cook until veggies get tender. Add all of your spices mixing them in well to really coat the veggies. Pour in your beer of choice and cook for a couple more minutes before adding the cans of beans, tomatoes and chipotle peppers. Let your chili continue to cook over a low heat for about 30 minutes, stirring occasionally. Serve heaping bowls with your favorite chili toppings!!
