After a busy Saturday of driving kids back and forth to the park and play dates, I needed a super simple dinner for my family (plus a few extra kids that end up at my house for dinner occasionally). Every busy Mom knows that the quickest crowd pleasing dinner to throw on the table is quesadillas! Just sprinkle some shredded cheese cross a tortilla, slap another one on top and toss it in the oven until melty and delicious! I usually serve cheese quesadillas to the kids with some sliced apples, salsa and sour cream, but last night I put a little more effort into it and made an awesome Black Bean and Avocado Salad. Next time you are going to have guacamole or salsa, try making this instead!
Black Bean and Avocado Salad
2 avocados roughly diced
juice of 1/2 a lemon
1/4 cup chopped cilantro
1/4 cup chopped red onion
1 tsp. salt
1 tsp. chopped garlic
1 cup of cooked black beans (or half a can drained and rinsed)
1 1/2 roasted red peppers chopped
1/2 large yellow bell pepper chopped
Place all of your ingredients into a large bowl and stir well to combine. Enjoy on top of quesadillas or with tortilla chips! Yum!
