Italian food has always been a comfort food for me and just because I’m vegan doesn’t mean that I can’t still enjoy all the fabulous dishes that I love! Since I try to eat mostly gluten free, I was super excited to find a vegan, gluten free gnocchi in the pasta isle of my regular mainstream grocery store. I ended up preparing it slathered in a jarred marinara, sandwiched between some fresh sautéed greens that I made with onion, garlic and vegan pesto and Beyond Meat hot Italian sausage. This super easy dinner with less than ten ingredients was YUM!!!
