Cabbage and Brats with Cheesy Quinoa Grits

I was in the mood for some German fare so I cooked up some vegan bratwurst with sauteed chopped cabbage and a jar of sauerkraut. You can saute this all up with a drizzle of oil or some vegetable stock. I cooked mine with veg stock and then finished it with a couple tablespoons of melted vegan butter.

I served it on top of a blend of cheese grits and quinoa. Then, I threw a bag of frozen vegetables in the microwave to add some color to the dish.

To finish, I added some good mustard and crunchy pickles on the side.

½ head of fresh chopped cabbage

1 large jar of sauerkraut

1 package vegan bratwurst, sliced lengthways or chopped

2 tsp. Fennel seeds

salt and pepper to taste

1 tsp. six pepper blend

To make cheesy quinoa grits, just add grits and water or stock to a bowl and microwave for about 6 minutes or until most liquid is absorbed. When grits are cooked, stir in already cooked quinoa, vegan cheese, vegan butter, salt pepper to taste.

2 T. vegan butter

1 cup grits

1 cup shredded vegan cheese

4 cups veg broth or water

1 cup cooked quinoa (cook this ahead of time!)
