One children’s book that I always think of to read on Earth day is Todd Parr’s, The Peace Book. Not only does this book have a drawing of Earth on the cover, it has a wonderful message of peace to everyone throughout the pages. When you get to the page with pizza for everyone, talk about what your favorite kind of pizza is and then make it!
A great way to use up leftover pizza toppings after making pizza is to create a simple Quinoa Veggie Bowl!
Pizza for Everyone
3-4 store bought pizza crusts
1 jar marinara sauce
2 8oz. Bags of vegan shredded mozzarella cheese
2-3 T. olive oil
optional toppings:
vegan sausage
spinach
mushrooms
asparagus
bell peppers
olives
fresh basil
Preheat the oven to 425 degrees. Place pizza crusts on pizza sheet pans and brush the edges with olive oil. Spread marinara sauce evenly on top of each pizza (about 1 cup on each), sprinkle shredded cheese (a couple handfuls for each) over the pizzas. Top your pizzas with whatever toppings you like. Bake for 8-10 minutes then let your pizzas rest for just a few before slicing up to enjoy.



Quinoa Veggie Bowl
1 cup cooked quinoa
chopped veggies of your choice
4 T. marinara sauce
olive oil
Chop your vegetables into bite size pieces and place them on a baking sheet or piece of aluminum foil to drop in your air fryer. Drizzle with olive oil and season however you like. Bake or air fry your veggies until tender (oven: 425degrees for about 10 minutes, air fryer: 400degress for about 5 minutes).
When the vegetables are done, serve them on top of your cooked quinoa with marinara and maybe top it all off with your favorite vegan cheese and some fresh basil.
