Banana Cream Filled Chocolates

In the book Curious George Goes to a Chocolate Factory, by Margret & H.A. Rey, George’s curiosity leads him into the packaging room of a chocolate factory. With one careless step, George causes trouble for the workers but as always he ends up saving the day. This story really leaves you wanting to try a banana cream filled chocolate just like George! This recipe makes plenty to share or fill your own boxes to keep in the refrigerator for at least a week.

Banana Cream Filled Chocolates

Makes 48

2 large ripe bananas 

20 chocolate cream filled sandwich cookies (chocolate filled Oreos)

2 cups vegan chocolate chips

6 T. Coconut cream

2 T. cornstarch

1 tsp. Vanilla Extract

1 T. confectioners sugar

Yellow writing frosting (optional)

Prepare 2 mini muffin pans with mini cupcake liners. Place the cookies in a food processor with 2 T. of coconut cream and puree until the cookies become a sandy texture. Place 1 tsp. of the cookie mixture in the bottom of the prepared muffin pan and press to spread it evenly across the bottom of the cupcake liners. Next, place the bananas, 1 T. cornstarch, 1 tsp. vanilla, 1 T. confectioners sugar, and 4 T. coconut milk into the food processor and blend until creamy. In a small saucepan, heat the banana cream over medium heat while continuously stirring for just a couple of minutes to thicken. Spoon thickened banana cream, 1 tsp. each on top of cookie layer in the muffin pans. In a double boiler (medium saucepan with a few inches of water in the bottom with a heat proof bowl on top) over medium-high heat, melt the chocolate chips. Lastly, cover the tops of each banana cream with a thin layer of melted chocolate, then place them in the refrigerator to set. If you would like to add a yellow frosting banana, you can once they are ready, using store bought yellow writing frosting.
