After reading the book The Rainbow Fish, by Marcus Pfister, a perfect snack is seaweed snacks. It’s just what I’d imagine the colorful fish in the story would have together at the end when they all become friends. This easy snack would also be a good one to share with friends just like the fish in the story shares its scales.

Seaweed Snacks
1 0.6 oz. Package of seaweed snacks or full size nori
1 cup of cooked medium grain rice
1 carrot sliced to fit seaweed (about the size of a matchstick)
½ cucumber sliced to fit seaweed (about the size of a matchstick)
dressing for rice:
¼ cup water
½ T. sugar
½ T. apple cider vinegar
Place all of the ingredients for the dressing into a small saucepan and heat just until the sugar dissolves.
When your cooked rice has cooled to the touch, sprinkle the dressing over the rice and stir to combine. Lay your seaweed out and evenly spread a thin layer of rice to cover the seaweed, leaving the edge of one side empty. On the side that is not empty, place a very small amount of cucumber and carrot. Carefully roll, starting at the end with the veggies, until it’s sealed at the end that you left empty. Roll up as many as you like and enjoy with a dip such as soy sauce or vegan ranch.
