This time of year with everyone back to school, many mornings I find myself singing the wheels on the bus tune, that we all know so well, with my kids. We even got out our Pete the Cat book, Pete the Cat The Wheels on the Bus. After reading the book and belting out the song, we made a perfect after school snack to go along with it. Sugar cookies, round like the wheels and lemon curd on top to make them yellow like a school bus!
Lemon Curd
½ tsp. vanilla extract
½ cup sugar
1 T. cornstarch
1/4 cup plant milk
¼ cup lemon juice
2 tsp. lemon zest
In a small saucepan over low heat add the sugar, cornstarch, lemon zest and juice. Whisk the ingredients all together and then add the milk. Turn the heat to a medium high and continue whisking for about 5 minutes or until the mixture comes together to coat the back of a spoon well. Once it is a good consistency, stir in the vanilla extract and transfer the lemon curd to a bowl, let cool completely.
I made some vegan sugar cookies and let the kids spread a good dollop of lemon curd on the tops of them all for a yummy treat!
You can find tons of simple vegan sugar cookie recipes online and if you don’t have time to bake from scratch, just buy some pre-made cookie dough at the store! The Sweet Loren’s brand, which is widely available, is awesome, vegan and gluten free! Sprinkle the tops with some powdered sugar and enjoy!
